Planning something similar for Friday. (Fish day) Costco has huge white shrimp on sale for $6
lb.
Did I tell you lately that I dig your style?  Your vintage/country hybrid with decor is cool.  A person could fuck that up quick and just go full 80's floral/mauve all over the place.

Pretty straight forward. Grilled, Lemon garlic bird legs, rice and veggies. (coconut oil tossed seasoned with this Greek adobo seasoning my wife got from tastefully simple thingy that her sister does.

Had 6 decent walleye (around 2-3 lbs each. 3 frozen and 3 fresh, just in case the game warden is reading....did the fish fry thing. Realized I was out of flour so used masa with lemon pepper, garlic, dried chipotle peppers, and a little salt. Seasoned the cornmeal with smoked paprika and salt/pepper. The masa was better than wheat flour...it's always fun when an improvisation turns out better than the original plan, yeah? I rolled it and let it set in the fridge overnight (or until the masa gets sticky if you aren't waiting that long) Then roll it a second time, just enough to kind of dry up the first coating, egg dip it/cornmeal dip it, fry it up. This is my favorite time of the year as far as fishing goes. If i'm lucky I'll have a mess of crappie by next weekend.
Man, I miss @Winter_Steelheader being around. Every time I get all worked up about catching some walleye, he'd throw out a "mine's bigger" photo.

I had some mince meat to cook up before I go shopping againt this week, I decided to make some beef enchiladas. 

Very nice, just finished one and washing it down with a glass of wine. 

Have another two to eat before the big shop, and left over cooked mixture to put in the freezer.

Grilled pork chop, broiled fruit and veggies salsa (peach, pineapple, mango, sweet pepper, onion, zucchini, Serrano pepper), and air fried yellow taters with elote seasoning (Parmesan cheese, chipotle powder, garlic, onion powder, smoked paprika) then reduced the pineapple juice based marinade to a glaze, added some brown sugar, done. Took all of 30-49 min start to finish.
I'll throw in the basic recipe if anyone wants it. If not, all good

Oh, and pineapple/apple cider vinegar/honey/lime zest/ground,dried chipotle pepper coleslaw. (Good for pulled pork tacos too) And thanks. Seriously quick and easy if you marinade the pork either overnight or at least an hour or 2 ahead of time)

Since dealing with IBS trying to avoid cheese/dairy, wheat, etc. Keeping proteins mostly to seafood for now.

Tonight I roasted some veggies, poached a piece of cod and made a recipe I've not had since the 80s. It's from a vegetarian/health food restaurant in a beach area of southern California. I still have the cookbook they signed for me when I did a cooking class with them. They called it "Savory Sauce" and it is. Very simple and tofu based. Oh, go ahead an scoff! But when you're on a restrictive diet anything remotely resembling a cream sauce is welcome. It was SO good I kept dipping veggies in it long after my plate was empty!
