I’m a big fan of Autumn squash soup made with butternut squash but have wondered if soup made from zucchini would be as tasty. I like fried zucchini and fried yellow squash but have never tried making soup. We do like yellow squash cubed and cooked with butter and onion until it’s soft. I guess it will take a little experimenting with zucchini to see how it tastes.
We also use both types cut into strips and stir fried but the soy sauce hides the taste.

What to do with the Zucchini Abundance
When I had an abundance of Zucchini I made pickles etc. 

Another recipe that I like a lot is slicing the zucchini into rounds, dip them in egg and cornflour and then lightly fry them either side. 

Served with garlic mayonnaise as a dip. Although would be great with other dips. 

Its a great starter and great for getting children to eat veg. 

Plus it makes such a lot. I like them hot or cold. 

They melt in the mouth. I can eat a whole plate of them. 

Another recipe for zucchini is the French dish of Ratatouille. I've always like ratatouille.
