Weekly meal plan that saved me a decent amount of money.

What do you do when you are laid up in a hospital bed for 2 days? Make a dietary plan/menu for the week. Have never really done my planning/shopping like that before. I have to say, it was kind of a pain in the ass, but worth it. By buying only the items for the sides and/or main course and sticking to what was on sale, I saved close to 100 bucks. Making some things in bulk at the beginning of the week (Chickpeas, rice, etc) that will be used in several various meals......When did we get away from shopping like that? My mom used to do that. Make and freeze the stuff that is a staple, buy for the week and not just for one dinner.....The menu plan is actually pretty decent. Nothing too labor intensive (Like a souffle') and all of it pancreas friendly (High plant based carbs, high protein, low fat, portion control, etc) There is a web site that has a TON of weekly meal plans for chronic pancreatitis patients that I picked and chose from. Will post it as soon as I dig it up again.
