
In the last week or so I've been looking at Oxalates and due to it being such an important subject matter, it was suggested that we have a dedicated thread to discuss it. Then today, while looking at our vets website they mention what they see under the microscope in dog's urine when there is oxalates in their urine. The vet's say that the oxalate crystals are X shaped.
The large % of oxalates comes from plant foods, e.g. some fruit, veg, nuts and seeds, an example being chia seeds and almonds, spinach is one of the vegetables with the most oxalate and sweet potato is another one. Sally Horton studied nutrition degree at Cornell University, although says they weren't taught anything about the danger of oxalates. She then went on to do her masters in Public Health. She was a strict vegetarian, then Vegan, until she became seriously ill and that took her on her journey to find the cause, Oxalate overload from the vegetarian diet. She was eating sweet potato every morning for breakfast. I don't call that eating moderately and we all know how dangerous the vegan diet is.
She has written a book titled "Toxic Superfoods", and it is a mind blowing book, she really has done her historical medical research, plus she has included quotes from physicians and cites human and animal case studies. I will share some quotes from the book on this thread and I'm hoping that those of you that have an interest in it will discuss it.
This subject matter is a must be aware of this information and Sally shares that there is a lot of "misinformation" on the internet about oxalates. Hence, her book is an important intervention.
I watched numerous video interviews with her probably about 7 hours worth. There is some overlap in the interviews although I've found that there is always additional information due to different interviewers asking different questions. One of the crucial aspects of it is that children's kidneys can't excrete oxalates. So why are babies and toddlers meals full of vegetables with oxalates?
Knowing that some plant foods are toxic for the body isn't new to medical scientists, they've known for a few centuries.
Sally Horton says that if human urine is cloudy it means there is an oxalate overload.
When a person is thirsty it means that the body is asking for water to excrete oxalate.
I do have a few questions for Sally, (I have my eyes open) although I think it would be great if Ivor Cummins interviews her.
Scientists know that oxalates are the cause of kidney stones in both animals and people and that is where most of the research has been focussed to date, although Sally says that India is doing the most research into oxalates, due to Indian spices being full of oxalates too.
I also found a paper on oxalates being involved in the degeneration of eyesight leading to a torn retina. However, there has to be a lot more research funding for this area of medical science because of the impact that it can have on the metabolism, gut microbiome, cause of inflammation, arthritis, diabetes, blood conditions, cancer, etc etc.
People with kidney issues (especially stones), are advised by the medics to restrict their oxalate intake to 50mg a day, and Sally gives examples in her book at how Americans are having from 800 to 2,000mg a day. Has you know the average American diet is quite different to the average English diet. So I'm doing my best to weave through the differences. Also some Americans are known to go all in with something once they embrace it, and those that drink spinach smoothies are killing themselves.
After considering all the evidence, I'm convinced there is a "Food Conspiracy", against the American people. It is a "conspiracy for profit" at the expense of the people.
At the recent Low Carb Conference in Denver 2023, one of the presenters spoke about the corporate influence of the US government guidelines on food and Congress is not happy about it.
